Once again, it's getting late in the afternoon and I haven't even thought about it enough to take something out of the freezer and now it's too late. Again.
Am I the only family cook who is constantly eluded by this question?
Does anyone have a clever & simple solution to this daily dilemma?
if so.... I'd love to hear it!!

I'm even worse. I have to eat gluten free, so I don't even know what I'm going to have for dinner half the time. My hubby works in retail so he's basically on his own. On a good note, my kids are old enough that they are hardly home so they are on their own as well. I keep telling myself I should make a couple of things on the weekend that I just have to heat up during the week. Haven't done it yet, though.
Ha ha, is it just the time of year or what, I feel like that lately..... seems like it's always spaghetti or something easy..... I have some great food blogs that I follow..... usually if I go there they inspire me!

When you find the answer, would you please, please pass it on to me? I am always scrambling at the last minute to find something to cook for dinner, and almost always at least one ingredient short of every idea I come up with!!
I'm itching to bbq but it's still too cold. On Monday we had wraps and yesterday we ate early because someone was coming over at 6 o'clock and needed our help. So we ate cereal at 5 pm and I made mini pizzas for 9 pm. TODAY?! I haven't figured that one out yet either.
I roasted a chicken already and it's not even 3 in the afternoon, I like to pick all the skin off first and eat it before my fiance gets home from work and wonders what the heck I'm consuming:) I just love roasted chicken skin!
Cook early in the day while you still have energy and then heat it up. Or...get a crockpot! :-)

I always hate figuring out what to fix. I really don't love to cook, but can and do in order not to eat out too much. I would prefer going out though.
I hope you've eaten something and didn't starve! I try to decide what I'm going to have when I get up in the morning! lol We grilled a steak tonight and stir fried some fresh veggies! Enjoy your night! Love your blog! ♥
Don't know if this will help, but I make extras while I'm cooking then freeze the leftovers...3-5 days later I throw it in the microwave or heat it up in the oven and presto...dinner is served ha! Just be sure to put the date on it. Also, get em use to leftovers.
Another thing I do is, I'll make a roast, then a few days later make vegie beef soup with the leftovers. When I make a meat or chicken pie, I'll make 2 and freeze one. Same with Chicken Verde Enchiladas. It does help out during the week. Helps when unexpected guess arrive as well.

I'm with Vintage Girl up there . . . when in doubt, have breakfast for dinner. Never a complaint in my family when that's served.
Oh, but I feel your pain. I am so tired of trying to come up with something new. I don't cook every night. Probably 2 or 3 times during the week and on Sundays. The other days it's quickie out of the freezer stuff, soup and sandwiches or breakfast!
I love crock pot cooking - when I remember. Few days ago I did a turkey breast i the crock. Rubbed it with butter and seasoned real well, added just a smidge of chicken stock and white wine, and let it cook all day. It was delicious! The meat fell off the bone. And there was enough for a sandwich dinner the next night.
Also, if you package your chicken breasts individually when you get home from the store, they'll thaw so much quicker if you're pressed for time. Also, frozen chicken put in the crock pot in the morning with some cream of chicken or celery soup and an envelope of onion soup mix will give you another delicious meal by dinner time.

I have always been pretty bad about planning dinner. I don't know why, I sure didn't grow up that way. I would just rather eat like at 10 instead of 5,6,or7pm. My husband would probably end up eating cereal. Or his new wifes cooking. Just kidddding!
Oh I dooo have a tip! Get an electric pressure cooker. That baby changed my life. You can cook frozen chicken or beef in no time.. I love it more than my stove... not as much as my coffee maker. :) good luck to you.
I hate to cook because I can never think of what to make; my kids are so darn picky and like Lynette there's always an ingredient I'm out of. I always say that if money was no object I would eat out and have a cook for when I don't.
I thought I was the only doing that!! Had a lovely salad for lunch that was a last minute thought ... and now it is dinner time and having last minute thoughts for it! reservations?:) or breakfast for dinner! those just might be my choices!
